Ooh, so much cooking this week! OK, so we actually made the same meal three times, but whatever. When something’s good — and you have a lot of it — keep making it! On Wednesday we bought some hamburger meat for Andy and some portabella slices for me and spent a few days making burgers with various kinds of rice or potatoes as sides.
For our Sunday breakfast, I got up and made waffles. I love making waffles. It’s something my mother and I used to do together a lot, and they’re super easy. Sunday breakfast was always a big deal in my family. We’d have plates of buttery waffles or a giant pile of blueberry buttermilk silver dollar pancakes. Whatever it was, it was always nice to sit at the table together in our PJs, read the paper and just enjoy each other’s company.
