2011 Challenge Update

We’re still doing a great job of plugging along on 2011’s challenge to make 52 homemade meals. We’re up to 22 meals, so we’re almost half way through and ahead of schedule. Yay! So this weekend we made something I think is amazing: market vegetable enchiladas, which I’ve actually been making for many years and wanted Andy to try. Not only is it pretty yummy it’s really pretty! Of course I took a few pictures.

The first thing we did was cut up all the ingredients… and there’s a lot of them: sweet potatoes, mangoes, onions, garlic, red peppers, yellow peppers, poblano peppers, zucchini, basil, monterrey jack cheese… I probably left something out, but here’s a picture!

Then everything gets cooked for a couple minutes and becomes this amazing rainbow of fresh veggies.
Then all of that yummy mess gets spooned into tortillas (we get the best fresh ones from Orale at the West Side Market) and some cheese sprinkled on top. It cooks for a few minutes until it gets all mooshy and melty, and it’s deliiiiicious.
And because cooking is all about learning, we decided this would be a lot better if there was some salsa on top, something with a little spice… and I’d say more cheese, maybe cheddar. The other good thing is there’s a ton of leftovers, so that means more meals at home and more bang for the buck! Sounds like a win win to me.
