We’re still doing a great job of plugging along on 2011’s challenge to make 52 homemade meals. We’re up to 22 meals, so we’re almost half way through and ahead of schedule. Yay! To see the complete list of what we’ve made, click on the “Challenge 2011” button up at the top of the page below my fancy new header picture (cute, huh?!).
So this weekend we made something I think is amazing: market vegetable enchiladas, which I’ve actually been making for many years and wanted Andy to try. Not only is it pretty yummy it’s really pretty! Of course I took a few pictures.
The first thing we did was cut up all the ingredients… and there’s a lot of them: sweet potatoes, mangoes, onions, garlic, red peppers, yellow peppers, poblano peppers, zucchini, basil, monterrey jack cheese… I probably left something out, but here’s a picture!
